Ingredient Substitutes and Recipes



There have been multiple times when we are cooking a recipe and realize we don't have an ingredient to complete the meal -- or don't have enough of it.

Instead of taking a trip to the store, why not make your own?

Here's a list of the recipes to ingredients.... seems backwards, but there are some ingredients that you can make homemade.


Taco Seasoning (Rachel Ray)

1 Tbsp chili powder
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp crushed red pepper flakes
1/4 tsp dried oregano
1/2 tsp paprika
1.5 tsp ground cumin
1/2 to 1 tsp sea salt (more or less to taste)
1 tsp black pepper

Homemade Tortillas

3 cups flour 
1 tsp. salt 
1/3 cup vegetable oil 
1 cup warm water 

Combine all the flour, salt, vegetable oil, and water until it forms a dough. Roll the dough into a big ball and take about an 1 to 2 inch pieces off. Pat the dough flat with your hands or take a rolling pin and roll into circles. Put the dough on a flat pan on the stove and let the sides cook until there are little brown specks on both sides like you would see on other tortillas.




Lawry's Seasoned Salt
1 tablespoons salt
1teaspoons sugar
1/2 teaspoon paprika
1/8 teaspoon turmeric
1/8 teaspoon onion powder
1/8 teaspoon garlic powder
1/8 teaspoon cornstarch










Ground Allspice

For 1 teaspoon of Allspice:

1/2 teaspoon cinnamon 
1/2 teaspoon ground cloves








Buttermilk
For 1 cup of Buttermilk:

1 tablespoon of lemon juice or vinegar 
Enough regular milk to make 1 cup (let sit for 5 minutes)







Cream / Half & Half
For 1 cup
 of Cream: 
7/8th of a cup of whole milk
1/2 tablespoon of butter 
or 
3 tablespoons of oil
Enough milk for 1 cup 
or 

1 cup of evaporated milk





Condensed Milk
For 1 cup
 of Condensed Milk:
1/3 cup of evaporated milk 
3/4 cup of sugar
2 tablespoons of butter 

Heat until ingredients are dissolved.




Whole Milk
For 1 cup of Whole Milk:

1 cup buttermilk 
1/2 teaspoon of baking soda (if baking, reduce baking powder by 2 teaspoons) 
or

1/4 cup nonfat dry milk
7/8 cup of water
2 teaspoons of butter
















Baking Powder
For 1 teaspoon
 of Baking Powder: 
1/3 tsp. baking soda
1/2 tsp. cream of tartar 
or

1/4 teaspoon baking soda 
1/2 cup yogurt or buttermilk (decrease liquid in recipe by 1/2 cup)








Bread Crumbs
For 1 cupof Bread Crumbs:
3 slices of bread, crumbled
or
1 cup of croutons, crumbled









Butter

For 1 cup of Butter:
1 cup of regular margarine 
or
1 cup of vegetable shortening (for baking) 
or

1 cup of oil (but only if melted butter is called for)







Cornstarch (dry)
For 1 tablespoon of Cornstarch:

2 tablespoons of flour (must cook for at least 3 minutes longer to thicken)











Egg

1/4th cup of egg beaters 
or

2 tablespoons of mayonnaise (for baking batters only)
or
1/4 cup of applesauce
or
1/2 mashed banana







All-Purpose Flour
For 1 cup of Flour:

1/2 cup whole wheat flour
1/2 cup of all purpose flour (don’t substitute more than 1/2 the flour)


The following alternatives require more leavening, so add 2 1/2 teaspoons of baking powder per cup of flour.  Also recommended, use buttermilk and 1/2 a teaspoon of baking soda instead of milk to decrease heaviness.

3/4 cup rice flour 
or

1 1/2 cups of oat flour 
or

1 1/4 cups of rye flour 
or

5/8 cup of potato starch flour 
or
1 cup rolled oats 
or

1 cup fine cornmeal




Powdered Sugar
For 1 cup of Powdered Sugar:

3/4 cup of granulated sugar














Regular Sugar
For 1 cup of Sugar:

1 cup of firmly packed brown sugar 
or

1 3/4 cups confectioner’s sugar (not for baking) 
or

3/4 cup maple syrup (reduce liquid in recipe by 3 tablespoons)






Brown Sugar
For 1 cup for packed Brown Sugar:
1 cup white sugar
1/4 cup molasses and decrease the liquid in recipe by 1/4 cup
or 
1 cup white sugar 
or 
1 1/4 cups confectioners sugar






Fresh Herbs

1 tbsp of fresh herbs = 1 tsp of dried herbs









Beef or Chicken Broth
For 1 cup of Broth:
1 bouillon cube plus 
1 cup boiling water 
or
1 tablespoon soy sauce 
Enough water to make 1 cup 
or 
1 cup vegetable broth



Lemon Juice
For 1 tsp of Lemon Juice:
1/2 teaspoon vinegar 
or 
1 teaspoon white wine 
or 
1 teaspoon lime juice










Mayonnaise
For 1 cup of Mayo:
1 cup sour cream 
or 
1 cup plain yogurt











Sour Cream
For 1 cup of Sour Cream:
1 cup plain yogurt 
or 
1 tablespoon lemon juice or vinegar 
Enough cream to make 1 cup 
or 
3/4 cup buttermilk mixed
1/3 cup butter




Soy Sauce
For 1/2 cup of Soy Sauce:
4 tablespoons Worcestershire sauce
1 tablespoon water
